Mushroom & Caramelised Onion Pie




Olive oil

1 medium sized white onion finely sliced lengthways

250g chestnut mushrooms sliced

1 clove garlic chopped

1 tsp runny honey

few sprigs of fresh rosemary

Salt and pepper


  1. Preheat the oven at 180c or gas mark 4
  2. Get a 20cm or 23cm diameter round cake tin and pour in a drizzle of olive oil and rub in all over so the pastry doesn’t stick
  3. In a frying pan over medium heat put the chopped onion and garlic with olive oil and cook down for around 5 mins
  4. Add and stir in the honey and let cook and caramelise for around 10 mins
  5. Add the mushrooms to the pan along with the rosemary and salt and pepper. Let cook until the mushrooms cook down a little for around 5 – 7 mins
  6. On a clean work surface sprinkle some flour down, and place the sheet of puff pastry on. With a rolling pin gently roll out the sheet to reduce the thickness and making sure it’ll cover the cake tin
  7. Then carefully place the pastry in the cake tin, trim any access bits round the edges with a knife. Carefully roll the edges from outside in round the pastry slightly so it creates a bit of a pattern.
  8. Pour the mushroom and onion mixture in to the cake tin in the pastry lining and even out the filling
  9. Place in the oven for around 25 – 30 mins or until the pastry goes golden brown
