My partner Elliot, has a tiny obsession with burgers. Always ordering them in restaurants, having them as take out and it’s always his ‘go to’ comfort food. It is currently under control…but I do worry about him sometimes. ANYWAYS when I’d found that red meat was doing no good for my body anymore and finding it very hard to digest I turned to veggie alternatives, like this amazing mixed bean burger!
I am so excited about posting this gem of a recipe. Only three… THREE ingredients needed and these little cups are so rich and delicious. They’ve become my absolute favourites as a sweet something ‘go to’ as they are so easy and quick to make, and completely guilt free.
This is the easiest, yummiest veggie meal EVER. Ok, maybe not everyone would agree, but I promise you it will not disappoint!
It’s filling, cost effective and really delicious. Lovely butternut squash with a variety of vegetables, subtle flavours and nice bit of feta to top it off – whats not to like!
I just wanted to start off by saying that sharing the experiences with my health and the journey I’ve had over the past year is not easy. I am usually a very private person and not someone who overshares easily. But writing this is a way of helping me to stay motivated with my changed and improved lifestyle, eating habits and to help further heal both physically and emotionally.
I have always been a massive foodie (to say the least!). Always loved food, had a passion for cooking, baking and…. overindulging! I would eat anything and everything, was never overly picky and and always loved trying out different flavours. I had always been a massive sugar monster, eating chocolate bars and cakes and well, sometimes didn’t have the healthiest of diets. However just over a year ago, completely out of the blue, things got complicated with my health, I got very sick and along with other lifestyle choices my food habits had to change for the better.
I’ve always been a breakfast person. The moment I wake up I can’t wait to eat! It sets me up for the day, gives me energy and I really do feel t’s the best meal of the day.
This is actually an old family recipe, my mum used to make these for me on the weekends or when I needed cheering up. I remember the sweet smell of pancakes filling up the house and making me feel all warm and fuzzy.

I love a blueberry muffin, especially then you’re strapped for time and need something quick and on the go for breakfast or a snack during the week. These are so easy to make and are the perfect Sunday (or any day) bake. They can last you for the week if you keep them covered, and by all means have them for breakfast, as an afternoon snack with a cup of tea or for something sweet after dinner – whatever takes your fancy!
